Introduction
This is one of those recipes that looks like you spent hours on it but secretly, it’s surprisingly simple.
A flaky puff pastry wrapped around a rich, savory mushroom filling with melted Gruyère cheese—it’s the kind of combination that just works. The first time you pull it out of the oven and see that golden, braided crust, you’ll understand why this dish feels a little special.
What I like most about this recipe is how versatile it is. You can serve it as an appetizer a light dinner or even something impressive for your guests without stressing in the kitchen.
And yes one more thing to add__ the smell while it’s baking? That alone is worth making it.
Ingredients
• 1 sheet puff pastry (thawed)
• 2 cups mushrooms finely chopped
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 1 cup Gruyere cheese, grated
• 2 tbsp olive oil
• 1 tbsp butter
• 1/2 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp thyme (dried or fresh)
• 1 tbsp parsley chopped
• 1 egg (for egg wash)
Instructions
1️⃣ Preheat the oven
Set your oven to 200°C (400°F) and line a baking tray with parchment paper.
2️⃣ Cook the mushroom filling
Heat olive oil and butter in a pan over medium heat. Add onions and cook until soft, then stir in garlic. Add mushrooms and cook until all the moisture evaporates and they start to brown this step is key for deep flavor.
3️⃣ Season & cool
Add salt, pepper, thyme and parsley. Mix it well then remove from heat and let the mixture cool slightly.
4️⃣ Prepare the pastry
Roll out the puff pastry slightly on a flat surface. Place the mushroom filling in the center then sprinkle Gruyere cheese over it.
5️⃣ Create the braid
Cut diagonal strips on both sides of the filling. Fold them over alternately to create a braided pattern.
6️⃣ Egg wash
Brush the top with beaten egg for that golden finish.
7️⃣ Bake
Bake for 20–25 minutes, or until the pastry is puffed and deeply golden.
8️⃣ Cool & serve
Let it cool for a few minutes before slicing this helps the filling set.
Tips & Variations
• Cook mushrooms until dry this prevents a soggy pastry
• Swap Gruyère with mozzarella or cheddar if needed
• Add spinach for extra greens and texture
• A touch of cream cheese can make the filling richer
• Always keep puff pastry cold before baking for best results
